James Knight is a vocal advocate of sustainability, which requires a balance of sourcing our products from UK waters which are under very good management, and handpicked overseas fishing grounds and fish farms.

Fresh fish is a precious commodity, and we are committed to encouraging our customers to eat more varieties of British fish from sustainable sources. Our Wedgecard scheme offer, for instance, gives customers a significant price discount for species such as grey mullet, gurnard, pollock and whiting.
