OLYMPICS 2012

You will all, no doubt, be aware that the Olympics are coming to London this summer. As exciting as this is, it will be posing a few logistical challenges to our operation - particularly being able to deliver to you at the usual time. YORKSHIRE & LINCOLNSHIRE FARMED TILAPIA

James Knight of Mayfair are delighted to be stocking Tilapia farmed in Yorkshire & Lincolnshire. They are farmed in a closed on shore recirculation system which avoids all of the negative environmental impacts associated with open water production. Issues such as discharges, escapes, transfer of disease and parasites, habitat damage, water pollution or degradation are prevented in closed system production systems. Tilapia are omnivores, and as such have a low requirement for fishmeal and fish-oil in their diets, making them a net producers of protein and therefore a valuable aquaculture species. MCS recommend the species as a fish to eat due to the fact that it ticks so many boxes from a sustainability point of view. FISH 2 FORK

We have been delighted to work with Chef Pascal Proyart at the One-O-One restaurant at the Sheraton Park Tower on his new sustainable fish menu. We have been additionally working hard to develop the sustainability policy for this restaurant. As a result of this hard work, the One-O-One has been rated by Fish 2 Fork as one of the top restaurants on the UK. Please click here to read the review.

THE BIG FISH FIGHT

We very much enjoyed the recent Channel 4 series of programmes, and are actively supporting the campaign to end discards. We also continue to encourage our customers to try alternative species, and to this ends, we have produced our own guide. Please click here to read it.

CRAFT GUILD OF CHEFS GRADUATE AWARDS 2010

James Knight of Mayfair are proud sponsors of the Craft Guild of Chefs Graduate Awards.

The Graduate Awards scheme was first launched in 2003 by the Craft Guild of Chefs with the aim of creating a formal recognition of a young working chef’s culinary excellence. Each year it has grown from strength to strength, testing the knowledge and skills of chefs 23 years of age or under in a series of challenging culinary examinations.

Candidates are selected based on their entry form and mentor’s reference. They are invited to take part in an initial round of examinations, testing knowledge and skills including practical skills in butchery and fishmongery, the preparation of a mystery basket for a main course meal for four, plus a pastry dish. Those that make it through to the finals are given further tests of knowledge and skills similar to the first examination, plus the preparation of a classical dish. The pass mark for Graduate Achievers is 85%. This year, there were 3 achievers. As part of the fishmongery element of the exams, the candidates had to prepare some lemon soles which James Knight gladly provided. Please click on the link below to watch the video:

NORWEGIAN MINISTRY OF FISHERIES VISIT

On the 8th & 9th of October 2009, the wholesale division was visited by the Norwegian Ministry of Fisheries. We were delighted that all representatives enjoyed the tour of our facilities as much as they did, and were most grateful to receive the note below following their visit:
